Chili Mac in the Crockpot



Chili Mac in the Crock Pot
(recipe from countrysidecravings.com)

Ingredients:
8 oz. uncooked macaroni
1 lb. ground beef (cooked and drained)
1 small onion (chopped)
4 cloves garlic minced
2 (15 oz.) cans chili beans in sauce
1 (28 oz.) can crushed tomatoes
2 tsp. beef bouilion
1 T. chili powder (or to taste!)
½ tsp. cumin
Salt and pepper (to taste)
1.5 cups shredded cheddar

Freezer Meal Prep Instructions:
Measure uncooked macaroni into a quart sized freezer bag and seal.  Measure 1/2 cup of the shredded cheddar into another quart sized freezer bag and seal. In a gallon sized freezer bag combine all other ingredients and seal. Place all three bags into another gallon sized freezer bag. Seal and label.

Cooking Instructions:
Set aside pasta and cheese bags. Combine contents of large sauce bag with 2 cups of water in a crock pot and cook on low for 6-7 hours or until heated through. If meal is already defrosted you may need to decrease cook time.
 20 minutes prior to serving turn heat to high and add pasta.  Cover and continue cooking for 20 minutes or until pasta is cooked to your liking.  Top with cheddar cheese and if desired sour cream, green onion, or crushed up tortilla chips.

Raspberry Freezer Jam



Raspberry Freezer Jam
Ingredients:
1 2/3 cup fresh fruit
2/3 cup sugar
2 T. instant pectin
Prep Instructions:
Crush fruit.  Combine sugar and pectin and add to fruit.  Stir for 3 minutes. Pour into jar or container leaving ½ inch space at the top.  Close and let stand at room temperature for 30 minutes.  Place in freezer and freeze until use.
Serving Instructions:
When ready to use.  Defrost in refrigerator and it’s ready to eat!

Chicken and Stuffing Casserole



Chicken and Stuffing Casserole

Ingredients:
4 cups cooked chicken
1 can green beans
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup milk
½ cup sour cream
Pepper (to taste)
1 (6 oz.) box chicken stuffing mix
½ cup butter (melted)

Freezer Meal Prep Instructions:
Place cooked chicken in bottom of disposable baking dish.  Top with green beans.  In a small bowl combine soups, milk, sour cream, and black pepper.  Pour over chicken and greens beans.  In a small bowl combine stuffing and melted butter.  Sprinkle over top of casserole.  Cover with a double layer of foil and label.

Cooking Instructions:
Defrost in fridge overnight.  Bake uncovered at 400 degrees for 30-40 minutes or until completely heated through.
