Easy Brownie Berry Trifle



Well, I'm back...kind of! For those who haven't yet heard, we are expecting twins! Which is really exciting and crazy! I've been kind of not cooking so much lately so I won't be able to post daily like I used to but I will still post when I can! Rest assured that at some point I fully expect to enjoy cooking, eating and blogging again and will get this blog fully functional once I do!

So, that being said, a few weeks ago I finally had the opportunity to use my new trifle bowl! I love trifle because you can make it however you want, it's super easy, and it comes out looking super fancy!!

This particular trifle is one of my favorites and uses berries, brownies, pudding and cream! Yum! Hope you enjoy!

2 cups fresh or frozen raspberries
2 cups fresh or frozen blueberries
2 boxes instant sugar free chocolate pudding mix
4 cups skim milk
16 oz. whipping cream
sugar for whipping cream (I use about 3/4 cup sugar for this much whipped cream but you can do it to taste)
1 9x13 pan baked brownies

If using frozen berries make sure to defrost and drain before making trifle. Whisk pudding mix and milk together and refrigerate according to package directions. Bake brownies according to package/recipe directions. Let cool. In a large mixing bowl beat sugar and whipping cream together until well blended and somewhat stiffened. When all ingredients are ready layer them in a trifle bowl or regular glass bowl. Start with half of the brownies, then half the pudding, half the berries, and half the whipped cream. Repeat. Chill until ready to serve. Garnish top with extra berries right before serving, if desired!

If you are having people over, be warned, they won't want to serve it up because it looks so fancy so you'll probably have to do it yourself ;-) Haha, you know who you are!

Turkey Bacon Avocado Wraps


These are a great lunch alternative to peanut butter and jelly! We even have these for dinner with sweet potato fries now and then when I need something fast and easy! They are wrapped up in Mission brand Cheddar Jalapeno wraps...which let me just say are awesome! They are the same price as the burrito sized tortillas but they only come 6 to a pack (just so you know). I had them at a friends house and fell in love! I'm also super excited because they have them at Sam's club now for like half the price of Smiths! Anyway, there is my little plug for cheddar jalapeno wraps! Enjoy the recipe!

Turkey Bacon Avocado Wrap
3-4 slices thin cut deli turkey
2 slices cooked bacon
1 slice Swiss cheese
1/2 avocado -sliced
3 slices tomato
1/2 cup romaine lettuce (or lettuce mix with cabbage and carrots)
1 Tbls. ranch dressing
1 Cheddar Jalapeno wrap

Wrap all ingredients in tortilla and cut in half. Enjoy!
