Bacon, Jalapeno, and Raspberry Jam Ultimate Grilled Cheese
Yield: 3 sandwiches
6 pieces sourdough bread (or bread of your choice)
1-2 T. Butter
6 slices cooked bacon
1 large jalapeno (de-seeded and chopped)
4 oz. cream cheese (softened)
3/4 cup shredded sharp cheddar cheese
3 T. raspberry jam (or more if desired)
Cook bacon until crispy. De-seed and chop jalapeno.
Melt a small pat of butter in a pan and saute jalapeno until slightly softened. In a small bowl, combine cream cheese, cheddar and jalapeno until mixed.
Butter each piece of bread on one side. On a large griddle place three pieces of bread, buttered side down. Top each with 1/3 of the cheese mixture and two slices of cooked bacon. Spread the remaining pieces of bread with 1 T. of Jam each and place them on top of the bacon, jam side down.
Cook for 2-3 minutes or until golden brown. Flip sandwich and cook on the other side for 2-3 minutes or until golden brown. Enjoy the gooiest meltiest cheesy goodness sandwich of your life!
